Ok, yes I know I am getting a little carried away with the recipes but I keep getting asked to share some of the dishes we make at home, so here you go!

I love carrots and I often juice them and shred them in salads, mashed potatoes, and carrot bread.  Here are some easy to make carrot recipes you can make with little to no effort and its kid and toddler approved!

Carrot Crazy Soup

18 organic unpeeled carrots, chopped

1 organic sweet potato, chopped

1 organic potato

1 small squash or zucchini, sliced

2 cloves of garlic

1 teaspoon of organic allspice (pimenta dulce)

2 large peeled and chopped onions

1 handful of raw almonds

2 cups of organic coconut milk

2 cups of water

Salt to taste

Place all washed ingredients (except nuts) into a pot and bring to a boil, then cover a simmer on low for 20 to 25 minutes.  Once the soup is cooled down a bit, place in a food processor or blender along with raw nuts, I use my Vitamix which blends everything in just a few seconds.  Blend until smooth and enjoy!

Patatas Ala Carrot

10 medium-sized washed and semi peeled organic potatoes

2 cloves of garlic, mashed in mortar and pestle or pressed

2 tablespoons of organic extra virgin coconut oil or organic olive oil

1/4 cup of organic coconut milk

small tiny pinch of cayenne pepper (optional)

salt to taste

2 organic carrots washed and shredded

Cook your potatoes.  Once cooked mash lightly with a fork or masher.  Mix in the rest of the ingredients until well blended and enjoy!
