I love making all sorts of pancakes, both sweet and salty.  But now that my son has Celiac Disease I started messing around in the kitchen and came up with a pretty nice recipe for some yummy gluten and grain free cakes that the entire family can enjoy.  Plus you can serve them sweet or salty which in our case means they will either be for breakfast or dinner.

So without further ado, here’s to the gluten-free people in your life, this recipe is sure to make you lick your lips and want seconds.

What you’ll need if you’re making these salty:

1 cup of organic shredded summer squash or zucchini

2 tablespoons of organic chia seeds

1 heaping tbsp of organic extra virgin coconut oil, Melted (not in the microwave just leave out on a window sill or in a warm place)

2 tsp of organic coconut cream or organic coconut mana

½ cup of organic coconut flour

¼ cup of almond meal

1/2 tsp organic gray sea salt or regular sea salt

1/4 cups of organic chives chopped

1/4 tsp black pepper

First, take your chia seeds and soak them in ¾ cup of water for about 5 to 10 minutes until a gel forms.  I found that this makes a great egg substitute.  Of course, if you want to use eggs you can omit the chia seeds.

Blend all your ingredients including chia seed gel in your blender or food processor.  In a pan or flat grill place a teaspoon of coconut oil, melt at medium heat and scoop out spoonfuls of the mixture leaving about 1 inch of space between each scoop.  Flatten then with gentle care and cook until golden and then flip to do the other side.

Once they are ready you can cut them open and make a grilled cheese with them or serve with cream cheese, sour cream, meatloaf, nut salad, sautéed vegetables or whatever you like.

To make these sweet follow the same recipe above but omit the chives, pepper, and salt.  Instead use ¼ cup of finely chopped nuts or seeds, 3 tablespoons of organic coconut sugar, ½ tsp of organic vanilla extract and a pinch of organic nutmeg.

Prepare as mentioned above and serve with chopped bananas and organic strawberries or with organic almond butter and raw honey!!

Yummy Yummy.  I think I am going to whip up a mean batch of these right now!!!
