Yummy Jamaican Banana Fritters – You’re Going to Love this Delightful Treat!

Being that my mom was born and raised in Jamaica from a Greek father and an English mother; we grew up tasting all kinds of flavorful, diversified cooking.

One of the favorite breakfast or anytime yummy snacks that I enjoyed growing up and that I make for my children today are organic banana fritters.  These were also a favorite snack during all my pregnancies when I would get a craving for sweet food.  At times I would add in organic raw pumpkin seeds and hemp seeds to make it a protein and fiber-packed snack.  Super Yummy and super nutritious.

I was going to type up my recipe for you but decided instead to share a fantastic recipe I found online at ThatsSoYummy.com.

The only things that differ from my recipe are that I use organic sprouted grain flour and organic chia seeds instead of eggs and, I don’t EVER EVER EVER use refined sugar, instead, I substitute with organic coconut nectar, raspadura or raw honey.

There’s a thing in my house that when you have ripe ol bananas either you make banana bread or banana fritters.  These delicious tasty treats can be eaten morning, noon, or night, as a snack or as dessert.  These fritters are so easy to make and will satisfy any craving you may have.

So if you have a few of these bananas lying around your hose… don’t toss them, put them to GREAT use!

Peel and mash the ripe bananas.

Beat egg, sugar, vanilla, cinnamon, and nutmeg.

Next, blend egg mixture with mashed bananas.

Make sure it is all incorporated.

Then sift flour and baking powder into the banana/egg mixture.

Mix it all together.

If the batter seems to be too thick add a little milk… I added about 1/4 cup to 1/2 cup of milk.

Add oil to a frying pan and place on medium-high heat.

Drop spoonfuls of the banana fritter batter into the hot oiled frying pan.

Flip when you see the edges starting to get brown and golden.

Cinnamon Sugar

Lastly, combine cinnamon and sugar together to create your cinnamon sugar.  This is used to sprinkle on top of the fritters once they are finished cooking and still hot.

Sprinkle cinnamon sugar on top.

Jamaican Banana Fritters

Ingredients

3 ripe bananas

1 egg

1 teaspoon of vanilla extract

1/2 teaspoon of cinnamon

1/4 teaspoon of nutmeg

1/2 cup of sugar

2 cups of all-purpose flour

1 tablespoon baking powder

1/4-1/2 cup milk

Directions

Peel and mash the ripe bananas.

      Soak 3 table spoons in 1/2 cup of water for 10 minutes then blend and add to recipe.

  3. An economical recepi….no more wasting those old bananas, kids will love it!
