Who doesn’t love fried bananas?
One of the most difficult things for people who are following specific diets is finding a treat that is healthy and does not break any rules. Lately, I have received a few questions asking me to share some of the signature recipes I have made and taught over the years. So here is one of my favorite all-time yummy treats you can prepare in about 10 minutes. And it is GAPS diet legal, Paleo, grain-free, gluten-free, vegan and oh so delish.
To make this delightful mouthful of awesomeness you will need:
3 bananas with brown spots (sliced any way you like)
2 tablespoons of homemade almond butter or store-bought, I like this one
1 tablespoon organic shredded coconut, I like this one
1 teaspoon organic alcohol-free vanilla extract
1 teaspoon organic coconut manna
½ teaspoon ground organic cinnamon, I like this one
2 teaspoons of organic homemade ghee, when I don’t make my own I use this one or coconut oil
In a bowl mix all other ingredients and set aside.
Once bananas have browned nicely remove them and place them on a plate. Let cool for about 5 minutes and gently add little dabbles of almond crunch mixture.
Feel free to sprinkle with nutmeg if desired. However, nutmeg can cause issues with the digestion so it should not be consumed by those with autoimmune diseases or those following an autoimmune dietary protocol. Nuts also should not be consumed if following a strict autoimmune diet, a solution is to omit the almonds.
You may also sprinkle with coconut shreds or raw cacao nibs if chocolate is tolerated by the digestive system.
Now sit back and enjoy! These go great with homemade ice cream or make mini sandwiches like my little one did below.
