There are few baked recipes that can be made with such quickness and only a few ingredients. This recipe is one of them. “Grandma get on up cause this is a treat your grand-kids are sure gonna love”. Busy moms, dads and workout buffs you’re gonna love it too!
So check it out – you really only need 4 ingredients. Yes, only four tings man – plus two optional ingredients if you want to add them in.
In the mixing bowl:
1.5 cups of raw or sprouted almond butter (make your own or try this one or this one)
2 pastured eggs (get on out and support your local farmers!)
1/2 cup of raw cacao nibs, semi-sweet dark chocolate chips or carob chips (carob is a great chocolate substitute for those following an AIP diet or for those sensitive to chocolate)
3 Tbsp organic vanilla extract (alcohol-free for those following GAPS or AIP diets)
Optional ingredients
2 Tbsp organic raw honey (if you like things to taste sweet)
1/4 tsp aluminum free baking soda (this will help the batter rise a bit more)
1 Tbsp virgin coconut oil or cultured ghee (this will enhance flavor and add moisture if you don’t want your biscotti to be hard/dry)
Whip eggs first, then add in remaining ingredients and mix by hand until smooth or use a mixer for about 1 minute on the lowest setting.
Line a baking pan ( I use glass) with all natural parchment paper. Scoop in batter and bake in a convection oven for 20 minutes at 350 degrees Fahrenheit or bake at 375 degrees for 25 minutes in a regular oven using the middle rack.
Once time is up, let cool for 5 minutes in the oven then remove from oven and let cool completely on the kitchen counter. Once completely cooled cut into desired sizes and enjoy with coffee or tea. I didn’t cut mine into traditional biscotti slices because I wanted them to be smaller for our kids. These can be stored in an airtight container inside the oven for about 2 days. They can also be frozen to enjoy at a later time. Simply wrap in wax paper and place in Ziploc bags and freeze for up to 3 months.
Pack these in your gym bag, purse, diaper bag or briefcase for a healthy midday snack. Hope you enjoy it.
