Did you know that Coconut Oil is one of the best oils to use for cooking?  Not refined hydrogenated coconut oil but organic unrefined Virgin Coconut Oil.

Unfortunately, many people are misinformed about the benefits of coconut oil.  Studies were done to show that coconut oil, and all saturated fats, were bad for one’s health because they raised serum cholesterol levels. However, these studies were done on hydrogenated coconut oil, and all hydrogenated oils produce higher serum cholesterol levels, whether they are saturated or not. Recent research shows that it is the presence of trans fatty acids that cause health problems, as they are fatty acid chains that have been altered from their original form in nature by the oil refining process.

Organic unrefined virgin coconut oil does not fall into the category of unhealthy oils.  In addition, numerous studies now show that the high lauric acid content of coconut oil is very beneficial in attacking viruses, bacteria, and other pathogens and that it builds the body’s immune system just as human mother’s milk does, which also contains lauric acid. Promising studies have been done on patients suffering from immune deficiency diseases, such as AIDS.  With polyunsaturated seed oils now largely replacing coconut oil in the American and British diet, there is a huge deficiency of lauric acid that was present before World War II. The need for quality coconut oil, like Virgin Coconut Oil, is greater than ever!

Coconut Oil does not contain Trans-Fats, is Gluten-Free, Non-Toxic, Hypoallergenic, and contains Antibacterial, Antiviral, Antifungal, and Anti-parasitic healing properties.  Coconut helps to aid and support overall Immune System functions.

So just what can you do with Coconut Oil?  Well here are a few of the things we use it for:

Coconut Curry Chicken – I cook the chicken in coconut milk, coconut oil, curry, and garlic.  Brown the chicken first using a tablespoon of coconut oil then lower and simmer in coconut milk, curry, and garlic.  You can add another spoon of coconut oil if you like.  For another great coconut chicken recipe click here.

Pina Colada Smoothie – We use frozen pineapples, bananas, raw milk or coconut milk, organic raw honey and a teaspoon of coconut oil per 4 cups of fluid.  Blend and you have your self a delicious smoothie.

Raw chocolate Chip pancakes – You can use sprouted grains or regular organic flour and add in your carob or cacao chips.  Use coconut oil as needed.  Place on the electric skillet or in the oven making sure not to heat above 118 degrees.

Coconut Hair & Body Treatment – use organic unrefined coconut oil in your hair as a moisturizing treatment and on rough dry skin.  It’s fantastic and smells like you’re on an island.  I use it once or twice a month in my hair and on my scalp.

Researchers state that the optimal amount of coconut oil for an adult is between 3 and 4 tablespoons per day.  This equates to the amount of medium chain fatty acids a nursing child would consume in one day from mother’s milk.  It is best to use coconut oil three times a day at meal times.  I recommend that you begin with a smaller amount and build up to the recommended dosage if necessary.
